What is lees stirring, why is it used in the production of white wine and how does it add to the final style of the wine.
Lees are the byproduct of the alcoholic fermentation between the yeasts and the sugars.
By leaving the lees in the casks and mixing it up into the wine, once in a while, it is possible for the winemaker to add complexity and a rounder mouthfeel to a white wine.
This is most often done with less aromatic white wines and adds notes of bisquit and bread to the wine.
